Yep, that’s what I said curry and cheesecake. Sounds too good to be true though right? There are few adjustments but it’s all tastes amazing.

Grandma Junes chicken curry

  • 1 1/2 mugs rice
  • 1 kilo chicken breast (approx 5 breasts)
  • 1 tbsp Extra virgin Olive oil
  • 2 Onions
  • handful of sugar snap peas
  • 3 large carrots
  • 3 tins of chopped tomatoes
  • 1 tsp mustard seeds
  • 2 tsp paprika
  • 2 tsp cumin
  • 2 tsp coriander
  • 2 tsp garlic
  • 1 tsp ginger
  • 1/2 tsp chilli
  • 1 tsp vinegar
  • salt to taste

Add the oil to the pan and fry your diced chicken breast. Half way through that cooking time add the diced onions and mustard seeds and fry until the seeds pop. In a jug mix the paprika, cumin, coriander, garlic, ginger and chilli powder together with a splash of water to form a paste. Add the paste to the pan with a dash of salt. Leave for a few minutes then add all 3 tins of the chopped tomatoes. Simmer on a low heat for 30 minutes stirring occasionally. Boil your chopped carrots, sugar snap peas and what ever other lovely veg you would like to add. Drain your veg and add to the chicken curry pan at the end of the 30 minutes. Shake in your vinegar, cook your rice accordingly and serve.

This is a large batch and will fill 7 prep trays. It can be stored in the fridge for up to 3 days or frozen to grab when you want.

Each tray is 230 calories So if you wanted to could add a few poppadoms or have a go at making your on onion bhaji’s.

This has to be my all time favourite alternative to cheesecake. You can change everything about it to make sure you get your favourite flavour.

If your family is as big as mine or you love to have friends over then there’s always food, drinks and treats galore. Help yourself out by making these bad boys, they’re really simple and tasty. Just make a whole batch and let everyone dig in.
